The cultivation technology of the edible and medicinal mushroom Lentinula edodes commonly called Shiitake mushroom has been standardized.
The flow chart of the technology of shittake mushroom farming is as follows:-
- Substrate preparation
- (Mixture of hardwood sawdust, wood chips, Rice bran, and calcium sulfate)
- Fill one Kg wet substrate (65% moisture) into Polypropylene bags, plug with non-absorbent cotton
- Sterilize the substrate (121°C, 15 lb pressure for 90-120 minutes in autoclave)
- Cool the bags to room temperature
- Spawning (Aseptically, @ 5% of the wet substrate)
- Spawn running (22-26°C, 60-70 days)
- Coldwater shock treatment (10-15°C water, 6-8 hours)
- Sold as fresh or dry mushroom
- Fructification (22-26°C, 80-85% R.H, Light, cross ventilation)
