Mushrooms Improving Human Health and Promoting Quality Life |

Mushrooms have been considered as ingredients of gourmet cuisine across the globe; especially for their unique flavor and have been valued by humankind as a culinary wonder. More than 2,000 species of mushrooms exist in nature, but around 25 are widely accepted as food and few are commercially cultivated. Mushrooms are considered as a delicacy with high nutritional and functional value and they are also accepted as nutraceutical foods; they are of considerable interest because of their organoleptic merit, medicinal properties, and economic significance.  However, there is not an easy distinction between edible and medical mushrooms because many of the common edible species have therapeutic properties and several used for medical purposes are also edible. Mushrooms could be an alternative source of new antimicrobial compounds, mainly secondary metabolites, such as terpenes, steroids, anthraquinones, benzoic acid derivatives, and quinolones, but also of some primary metabolites like oxal

What are the nutritional benefits of mushroom stems?

Generally, yes, mushroom stems are edible. Not that I’ve had the pleasure of trying all edible mushrooms but, among those that I’ve tried including the ubiquitous button mushrooms (white and brown), oyster mushrooms, bunashimeji, portobello, straw mushrooms, Eryngii, abalone and Enoki, the stems are as succulent as the caps. I take exception only with shiitake (a.k.a. “Chinese black mushrooms” although they are not always black). The stems of the skiitake mushroom I find too fibrous and too chewy. I’m sure that there are people who find shiitake stems completely palatable.  When preparing fresh shiitake mushrooms, I remove the stems. With smaller shiitake mushrooms, it is easy to just pull of the stem to separate it from the cap. With larger skiitake mushrooms, pulling off the stem sometimes damages the cap — either the cap breaks or a chunk of the soft flesh comes off with the stem. So, what I do is to cut off the stem, cutting as close to the part where it is attached to

The sulphur shelf (Laetiporus sulphureus)

Sulphur shelf mushroom The sulphur shelf ( Laetiporus sulphureus ) mushroom is also known as chicken-of-the-woods or chicken mushroom. It’s a bright orange or yellow mushroom with a unique, meaty flavor. Growth Sulphur shelf mushrooms grow on hardwood trees in North America and Europe. They are widely distributed east of the Rocky Mountains in the United States. These mushrooms can either act as parasites on living or dying trees, or derive nutrients from dead trees, such as rotting tree stumps. Sulphur shelf mushrooms grow on trees in shelf-like clusters. They are commonly found on large oak trees and typically harvested during the summer and fall months. It should be noted that sulphur shelf look-alike  Laetiporus  species exist. They grow on conifer trees should be avoided, as they can cause severe allergic reactions in some people. Identification Sulphur shelf mushrooms are typically orange or yellow in color and grow in overlapping shelf-like clusters on hardwo

Reasons why Mushroom Growing means not money only

It’s a lot easier to grow mushrooms today than it ever has been. For decades, most of the mushrooms we ate came from giant farms using lab-based cultivation practices that required expensive equipment and demanding degrees of precision. In recent years, however, small farmers and home growers have had access to more accessible and efficient practices—and they’re helping to spread those practices by sharing them online. But what most people don’t know is that mushrooms are more than a popular food. They can also be grown in ways that improve the overall health and efficiency of plant and animal systems. Here are six ways in which mushrooms are more than just a superfood. 1. Creating Food from Waste Most farms produce tons of agricultural waste that is often burned or composted. But as nature’s great recyclers, fungi are able to break down nearly any carbon-based material, from woody trees to  industrial pollutants . Multiple commercial mushroom species  have been shown to grow

Mushrooms "Elixir of Life"

Mushrooms have been consumed since earliest history; ancient Greeks believed that mushrooms provided strength for warriors in battle, and the Romans perceived them as the “Food of the Gods.”  For centuries, the Chinese culture has treasured mushrooms as a health food, an “elixir of life.” They have been part of the human culture for thousands of years and have considerable interest in the most important civilizations in history because of their sensory characteristics; they have been recognized for their attractive culinary attributes.  Nowadays, mushrooms are popular valuable foods because they are low in calories, carbohydrates, fat, and sodium: also, they are cholesterol-free.  Besides, mushrooms provide important nutrients, including selenium, potassium, riboflavin, niacin, vitamin D, proteins, and fiber.  All together with a long history as food source, mushrooms are important for their healing capacities and properties in traditional medicine.  It has reported beneficial
