Shiitake are rich in polysaccharides like lentinans and other beta-glucans.

These compounds protect against cell damage, help your immune system, and boost white blood cell production for fighting off microbes.

Polysaccharides also have anti-inflammatory properties.

Shiitake mushrooms taste rich, meaty, and buttery when cooked.

While you can eat shiitakes raw, their flavor is much more pronounced and developed when they're cooked.

The stems of shiitake mushrooms are too fibrous to eat, but they still pack a lot of flavor.

Just a few stems can infuse a broth with rich flavors and earthy aromas.

The stems are especially good in vegetable and broth-based soups (as opposed to thick stews).

Shiitake mushrooms, botanically classified as Lentinula edodes, are the second most commonly consumed mushroom in the world after the button mushroom and are members of the Marasmiaceae family.

look for wrinkles and puckering on the skin of the shiitake mushroom.

This indicates that the mushroom is past its prime and the internal moisture has begun to evaporate.

If the skin bounces back, then the mushroom is fresh.

If the skin remains pushed in, it indicates that the mushroom is going bad.

What happens if you eat bad shiitake mushrooms?

Shiitake mushroom is LIKELY SAFE when consumed by mouth in food amounts, but it seems POSSIBLY UNSAFE to take by mouth in medicinal amounts.

It can cause stomach discomfort, blood abnormalities, and skin swelling (inflammation).

Are shitake mushrooms poisonous? Shiitake mushrooms, unlike some mushroom varieties, are not poisonous.

They'll stay fresh for up to 14 days if you keep them refrigerated.

Store bulk mushrooms in a paper bag in the refrigerator.

Look for mushrooms with gills that are brown or tan.

While some mushrooms with white gills are edible, the most deadly and poisonous mushroom family—Amanitas—nearly always have white gills.

Select mushrooms without red on the cap or stem. Choose mushrooms with white, tan, or brown caps and stems.

Eating spoiled or rotten mushrooms can cause gastrointestinal illness and even poisoning.

It's not the mushrooms that will get you – it's the microbes that eventually colonize and take over mushrooms once they are spoiled.

Slimy mushrooms are abnormal, and they should not be eaten.
