Snow Mushroom Recipe | Snow Fungus Soup | Snow Mushroom Soup

Snow Fungus Soup 

Snow Fungus is a white jelly fungus Tremella fuciformis that is available dried in many Asian stores.

INGREDIENTS:

0.50 lb Snow fungus flower

 1 tbsp Sugar, Asian rock sugar for preference

 1 tbsp Goji berries are also known as wolfberry

 5 dried red dates

 6 cups water

  • Soak the Snow fungus flower in water for at least 2 hours. Once it is soft trim away the hard base section and breaks it up into smaller pieces. I used a pair of scissors to do this.

Pressure cooker method

  • Add the water and Snow fungus and sugar to a pressure cooker and cook at high pressure for 20 minutes.

  • Do a quick release of the pressure on the pressure cooker by putting it under a tap and pouring water over the side. Add the Goji berries and red dates and simmer for 10 minutes then serve.

Stove stop method

  • Add the water and Snow fungus and sugar to a saucepan and simmer for about an hour.

  • Add the Goji berries and red dates and simmer for 10 minutes then serve.
